The name Carpaccio is not a casual choice. Carpaccio was born as a tribute to a great icon of Italian cuisine: Giuseppe Cipriani and Harry's Bar in Venice. At Carpaccio Beef Restaurant this idea is revisited through four variations, each designed to highlight the purity of the ingredient: Cipriani, with burrata cream and Parmigiano; Truffle, with the intense aroma of black truffle; Cacciatora, with balsamic, herbs and olives; Green Curry, a contemporary take with an aromatic nod to the East. Thinly sliced, carefully balanced, minimal but far from simple.
The Grill — Ceramic Plates at 900 °C

The grill is one of the central moments of the Carpaccio experience. In the kitchen, ceramic plates reach extremely high temperatures — up to 900 °C. The meat is exposed to the heat for just a few seconds: a thin crust forms on the outside, while juice, tenderness and depth of flavour are preserved inside. The most requested cuts include Tomahawk to share, T-bone for two, selected rib-eye, New York strip and fillet. Selections include international beef such as Black Angus and Wagyu, chosen for quality, marbling and performance in cooking.
Roman Classics & Comfort Dishes

Many come for the beef, but discover a broader cuisine built around the flavours of the Roman tradition. The menu includes iconic dishes such as spaghettone alla carbonara, amatriciana and fettuccine al ragù, alongside tartare, Wagyu burger, comfort dishes and seasonal vegetables. A menu for those who love beef, but also for those seeking complete, recognisable and well-executed cuisine in the centre of Rome.
