The restaurant was born in 2023, from an idea of Germano Bertollini — a descendant of that family of butchers — bringing the same care for the raw ingredient into a contemporary dining room: Via Marche 9, steps from Via Veneto, in the heart of Rome. 1893 stays where it belongs, with the family trade; this restaurant is its present-day form.
